Start with variety

Aim for at least 3–5 cheeses with a mix of:

  • Texture – soft, spreadable, firm, crumbly

  • Flavour – mellow, punchy, smoked, herby, fruity

  • Colour – vibrant blues, white-rinded wedges, festive reds or yellows
