Lettuce, Apple & La Fauxmagerie Balham Blue

Some combinations exist for good reason. Sweet and salty, crisp and creamy, clean and complex... apple and blue cheese is one of the great pairings, and David has the good sense not to complicate it.

Cool lettuce, thinly sliced apple, a scatter of pumpkin seeds. The Balham Blue crumbled generously - vivid, mellow, with that lingering piquant finish. A little lemon, a little oil. Nothing more is needed.

Serves 1

Ingredients

  • 2 large handfuls lettuce
  • ½ apple, thinly sliced
  • 40g Balham Blue
  • 1 tbsp pumpkin seeds

Dressing

  • Juice of ½ lemon
  • 1 tbsp olive oil
  • Salt and black pepper

Method Arrange the lettuce and apple in a bowl or on a plate.

Top with crumbled Balham Blue and pumpkin seeds.

Finish with lemon juice, olive oil, salt, and black pepper.
