Mafaldine with Roasted Orange Pepper & Shoreditch Smoked

There is something quietly luxurious about a warm pasta salad done properly. Good pasta, properly dressed, with something worth finding in every forkful.

David built this one around roasted orange pepper, jammy and sweet from the oven, and mafaldine, those long wavy-edged ribbons that catch oil and flavour in exactly the right places. Our La Fauxmagerie Shoreditch Smoked is the anchor: tucked through the warm pasta, it's slow applewood warmth playing beautifully against the sweetness of the pepper. Crispy onions, torn mint, a little extra olive oil. Simple, considered, and exactly what you want when the temperature is up - but you're still looking for some comfort.

Ingredients

  • 80g mafaldine pasta
  • 1 orange pepper
  • 50g Shoreditch Smoked
  • 1 tbsp crispy onions
  • A few fresh mint leaves
  • 1 tbsp olive oil
  • Salt and black pepper

Method

  • Roast the orange pepper at 200°C for about 20 minutes until soft and slightly charred. Slice into strips.
  • Cook the mafaldine in salted boiling water until al dente. Drain and toss with olive oil.
  • Add the roasted pepper and pieces of Shoreditch Smoked. Finish with crispy onions, torn mint, black pepper, and a little extra olive oil.
