Rocket, Smashed Cucumber & Camden Cultured

Ingredients
- 2 large handfuls rocket
- 3 small cucumbers, smashed and chopped
- 50g Camden Original
- 25g croutons
Dressing
- 1 tsp mustard
- 1 tbsp olive oil
- 1 tsp vinegar
- Salt and black pepper
Method
- Lightly smash the cucumbers with the side of a knife or rolling pin, then roughly chop into bite-sized pieces.
- Whisk together the mustard, olive oil, vinegar, salt, and pepper.
- Place the rocket and cucumber into a bowl. Add chunks of Camden Original and croutons. Dress lightly and toss gently before serving.
