Rocket, Smashed Cucumber & Camden Cultured

The smashed cucumber is a small act of intention that changes everything. Bashed open rather than sliced, the edges are jagged, the texture yielding - and the dressing gets in everywhere it should.

Paired with peppery rocket and a sharp mustardy dressing, it is bold and bright. The Camden Cultured Original brings balance: clean, lively, with just enough tang to hold its own. Croutons for crunch. Dress lightly and don't overthink it.

Serves 1

Ingredients

  • 2 large handfuls rocket
  • 3 small cucumbers, smashed and chopped
  • 50g Camden Original
  • 25g croutons

Dressing

  • 1 tsp mustard
  • 1 tbsp olive oil
  • 1 tsp vinegar
  • Salt and black pepper

Method

  • Lightly smash the cucumbers with the side of a knife or rolling pin, then roughly chop into bite-sized pieces.
  • Whisk together the mustard, olive oil, vinegar, salt, and pepper.
  • Place the rocket and cucumber into a bowl. Add chunks of Camden Original and croutons. Dress lightly and toss gently before serving.
