Ingredients

3–4 ripe figs, halved or thickly sliced

100g of Brixton Blue or Balham Blue

Vegan honey or agave syrup, for drizzling

Fresh thyme leaves, to garnish

Optional: a sprinkle of flaky sea salt
Method

Prepare the figs – Halve or slice your figs into thick rounds so they can hold the cheese.

(Optional) Bake them – For an even richer flavour, place the figs on a lined tray, drizzle lightly with vegan honey, and bake at 180°C for 8–10 minutes until softened and caramelised. Allow to cool slightly before topping.

Add the fauxmage – Place a small piece of Brixton Blue or Balham Blue on each fig slice.

Drizzle and garnish – Finish with a touch more vegan honey, a few thyme leaves, and a sprinkle of sea salt.

Serve immediately – Arrange neatly on a platter and watch them vanish as quickly as you made them.
