Courgette Ribbon, Strawberry & Shamembert

The most summery of the five recipes, and unapologetically so. Courgette shaved into ribbons, almost translucent, with a freshness that feels made for warm evenings. Sliced strawberries for a sweetness the balsamic keeps honest.

And Honestly Tasty's Shamembert: that bloomy rind, that cloud-soft interior... a cheese that belongs exactly here, on a plate this pretty, in this kind of weather. Almond flakes for a little texture. Done in five minutes. Looks like rather more.

Serves 1

Ingredients

  • 1 small courgette
  • 4 strawberries
  • 50g HT Shamembert
  • 1 tbsp almond flakes

Dressing

  • 1 tsp balsamic vinegar
  • 1 tbsp olive oil
  • Salt and black pepper

Method

  • Use a peeler to shave the courgette into ribbons.
  • Slice the strawberries and arrange with the courgette on a plate.
  • Add pieces of HT Shamembert and almond flakes.
  • Dress with balsamic vinegar, olive oil, salt, and black pepper before serving.
